Granola Part II (Or What to do with all the Veggies?)

A coworker (who we shall call E) and I decided that we would take one more step toward becoming hippies by participating in a Community Supported Agriculture program this summer. If you don't know what CSA is, it is where you pay a small membership fee and a certain amount on top of that to get fresh vegetables (as well as fruits, berries, and sometimes milk or meat products) delivered to you from local farms. For $11 each per week (plus a $75 joining fee) for 24 weeks, E and I will be getting a basket of fresh, in season, (mostly) organic grown vegetables delivered to a specific location near where we work. I think we missed what was technically week 1. So we started with week 2's vegetables. Right now it's "greens season" in this part of the country, so we got a ton of greens as well as strawberries and a couple of herbs. 


Here are my spoils from last week. (E has the other half, so this is just one half of the basket.) My portion included:
1 (of two) head butter lettuce
swiss chard
kale
spinach

some kind of mixed green

strawberries

basil 

and some unidentified herb (if you know what this is, please let me know).

Needless to say, E and I are now both overrun with "greens." I think the chard and kale are just going to end up going to waste this week, which makes me sad. They've both gone rather limp already. The mixed greens are holding up well, and I've eaten a third of the lettuce (I've been making quinoa salads to put on top of it). I had to figure out what to do with the spinach. I like spinach salads, but this isn't baby spinach, and I am running out of creative ideas for the greens. I decided to help myself along by making a "green" smoothie. (For those of you who don't know, this is one of those hippie/vegan/granola/heath foodie fad things to help you get extra fruits and veggies into your diet.) This is what attempt #2 looked like:


Not the prettiest of pictures, is it? This one included spinach, vanilla bean greek yogurt, an apple, and frozen strawberries, blueberries, and raspberries. It turns out that things like blueberries makes the shake brown instead of green. This one is actually a paler shade of brown than attempt number 1. Trust me, this one looks much more appetizing. I have a pink cup with a lid that I put these things in so that I don't have to actually see what they look like. But they don't taste half bad. 

This week will probably be another week of greens. Does anyone have any suggestions on different ways to prepare these things other than in a salad or smoothie form? I ate a salad at lunch today, but I was still very hungry afterward. I can't do that every day. I'm a small person to begin with, I need more sustenance than salad. And, let's be honest with ourselves, these smoothies are just a salad in pureed form. 

I think that the CSA thing is a great idea. It helps local farmers and we get fresh, in season vegetables very easily once a week. The only problem is figuring out what to do with them. I think I may can some things later in the summer (such as when we start getting tomatoes), but I don't know what to do until then. I have a very small freezer, and I will be moving in a few months, so freezing the items isn't the most feasible option (that's why I'm leaning toward canning). Any and all suggestions are welcome!

  1. I didn't know you were doing a CSA? SO fun! I'll ask bech if he has any suggestions...he's good with all of these things.

    Also, pics of maddie? PUHLEASE!

    Try making Kale chips. You just bake them in the oven. THere are several recipes on Food network. I think the Neely's have one.

  3. Also I think that's hyssop. It's in the mint family.

    1. I think you're right.

      I've thought about the kale chips, but I'm a little afraid to try them. I hear it's very hit or miss as to whether or not they come out well. The next delivery is today. If I get some more in, then I may go ahead and try that!
